Quick and Delicious: Thai Pork Salad Wraps

This recipe is originally from Taste of Home and I’m posting it with very minimal modifications (i.e., no mint).

It’s so simple to cook up, but it’s really tasty. It’s one of those recipes where I wonder how such simple ingredients can turn into something so delicious when you put them together.

Paired with steamed jasmine rice and some frozen dumplings from the local Asian market, it’s a fantastic dinner that won’t heat up the kitchen too much.

Ingredients:

  • 1 lb. ground pork
  • 2 Tablespoons dry breadcrumbs
  • 1/2 cup minced cilantro
  • 2 green onions, chopped
  • 1/4 cup lime juice
  • 4 teaspoons soy sauce
  • 1/8 teaspoon cayenne pepper
  • leaf lettuce
  • shredded cabbage

Directions:

  1. Brown the pork and drain if necessary.
  2. Stir in the bread crumbs, cilantro, onions, lime juice, soy sauce, and cayenne pepper.

To eat, place the meat mixture in a lettuce leaf, top with shredded cabbage and roll up kind of like a taco.
