Quick and Delicious: Quinoa and Black Beans

I’ve just returned from a (too short!) trip to Bolivia to visit my sister.  One important Bolivian staple is quinoa, so here’s a recipe that features it.  It’s not a Bolivian recipe, but it’s delicious!  My sister wasn’t sure where she got it, so it’s a bit of a mystery.  😉

Ingredients:

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1/2 broth cube
  • 1 cup cooked black beans
  • 1/2 cup canned corn
  • 1 tomato, chopped
  • 1/4 cup chopped fresh cilantro
  • 1 small onion, chopped
  • 1 T lime juice
  • 1 clove garlic, chopped
  • 1/4 teaspoon salt

Directions:

  1. Heat water to boiling
  2. Add broth cube and quinoa.
  3. Reduce heat to low.
  4. Cover and simmer 15-20 minutes until water is absorbed.
  5. Fluff with a fork and add remaining ingredients.
  6. Cook 3 minutes until heated through.
